FOLIEPOP’S AT HILL COUNTRY GALLERIA OFFICIALLY OPENS TERRACE PATIO FOR DINE-IN SERVICE
French pastry and coffee house brings innovative, customizable pastries with more than 512 flavor combinations, savory FoliePop’s, and coffee drinks
BEE CAVE, Texas (September 10, 2020) -- Lifestyle and entertainment center Hill Country Galleria is pleased to announce that FoliePop’s is now officially open. The French pastry and coffee house is open only for outdoor dine-in service on its expansive terrace to start, while continuing to offer online ordering for pick-up and delivery. FoliePop’s was born out of the desire to offer the very best of French patisserie with a customizable twist. With the opening of its patio, guests can indulge in the innovative, never-before-seen pastries and signature recipes by Chef Antoine Chassonnery, as well as new savory FoliePop’s recipes by Chef Kévin D'Andrea, and assorted coffee drinks. FoliePop’s is located at 13420 Galleria Cir STE A-140, off of the Galleria’s Central Plaza, with the FoliePop’s Factory, a production kitchen and catering space, nearby at A-126. FoliePop’s is open daily from 7 a.m. to 8 p.m.

FoliePop’s is now open, starting with service on their terrace patio only, which faces the Galleria’s Central Plaza pavilion and lawn. The outdoor space seeks to transport guests to a cafe terrace in the heart of Paris and is outfitted with seating, at a minimum of six feet apart, and plenty of shading. Guests can peruse a digital menu by scanning QR codes that are posted throughout the terrace and complete their entire transaction via the digital order system. With a digital menu, FoliePop’s offers the convenience of streamlined pre-ordering not only on the patio but throughout Hill Country Galleria. Guests are welcome to enjoy their custom orders on the FoliePop’s terrace, on the adjacent central pavilion and great lawn, or to-go.
The pastry house will continue its online ordering service, which launched earlier this summer, offering signature pastry boxes ideal for special occasions, business meetings, and more. FoliePop’s boutique-inspired interior space will open at a later date, pending COVID-19 developments. Guests visiting FoliePop’s are required to wear face masks when not seated and dining, maintain social distancing, and avoid gathering in large groups.
Guests can also catch a glimpse of the chefs in action at the FoliePop’s Factory, a production kitchen space around the corner from the pastry house, offering an inside look at the creative process. The 2,300 square-foot space supports the cafe while providing the capacity to fulfill online orders and catering requests.
FoliePop’s was born out of the desire to offer high-quality pastries that are a testimony to authentic French tradition and excellence while allowing the freedom to customize flavors and components to suit the consumer’s tastes. Guests are invited to “be their own chef” and choose from various options—all handmade from the freshest ingredients—for the three different components that make up FoliePop’s. The components include the following: FolieBases, hollow cup-shaped vessels made of a pastry such as banana bread, madeleine or brownie; FolieCreams for the filling; and the Pops, which are chocolate spheres filled with housemade coulis that are meant to be cracked before enjoying the pastry—the final element that gives the FoliePops an interactive and flavorful finish.
Flavors range from bright and fruity, like mango-passionfruit or lychee, to rich and indulgent, like crème brûlée and chocolate hazelnut. With eight different options for each of the three components, FoliePop’s offers guests 512 sweet combinations available in two sizes, regular or mini. In addition, the pastry and coffee house will serve savory FoliePops for the first time. Featuring signature recipes by Chef Kévin, pastry base options include choices like a hash brown, croissant, or French bun. Guests can choose from fillings like Truffle Croque Monsieur, lobster and shrimp roll, pulled smoked brisket, chili, and butternut squash coconut curry, and top with signature sauces like barbecue sauce, horseradish sauce, or Salsa Verde, plus the option to top their custom creation with melted cheese. FoliePop’s also offers ChouPops, which are signature bite-sized sweet puff pastries filled with assorted cream fillings.
True to the customizable experience, FoliePop’s also offers a menu of hot and cold coffee and tea beverages that are made-to-order, including the signature Espuccino Coffee, a play on “cappuccino” and “espuma” (meaning “mousse” in French or “foam” in Spanish). Like the FoliePop’s pastries, guests can choose each component, including the base drink, a flavored French syrup for a hint of sweetness, and the signature espuma foam topping in flavors like vanilla, chocolate, caramel, or peanut butter.
FoliePop’s is a family-owned and operated business helmed by Executive Pastry Chef Antoine Chassonnery and CEO Audrey Sigoure. Chef Antoine and Audrey spent years in Dubai developing products and the distribution network for renowned gourmet food and delicatessen company FAUCHON before uprooting their lives and, with the support of their Austin-based family, moving to the city in the summer of 2019 to fulfill their dream of opening a brand new pastry concept.
Chef Antoine Chassonnery is the executive pastry chef and inventor of FoliePop’s and hails from a line of influential chefs and culinary inventors in France, including his grandfather Auguste Pralus, winner of the prestigious Meilleur Ouvrier de France (“Best Craftsman of France”) in 1955 and creator of the Praluline, a famous pastry in France. Trained in world-class patisserie techniques, Chef Antoine managed creative production for properties like the St. Regis Bora Bora Resort and the InterContinental Hotel Group in Dubai, in addition to FAUCHON.
Chef Kévin D'Andrea is the executive chef at FoliePop's, responsible for the concept’s savory creations. A native of the South of France, Chef Kévin trained and worked with several legendary chefs in Michelin-starred restaurants prior to his move to Texas, including Alain Ducasse in the Hôtel Plaza Athénée in Paris and Yannick Alléno at Le Meurice. Chef Kévin opened his own restaurant, Mensae, in Paris, which was awarded “Best Bistro of Paris 2016” by Le Guide Lebey, an annual guide of restaurants, chefs, bars, hotels, and more that make up the “the taste of the times,” and he was also awarded “Best Young Chef” in the same year. In addition, Chef Kévin was a finalist on “Top Chef” France in 2015. After a seasoned career throughout Europe, Chef Kévin moved to Houston to serve as executive chef for La Villa in Houston before moving to Austin, which reminds him of his hometown in the South of France, and joining the FoliePop’s team.
